Wild Rice and Kale Bowl with Beet Dressing

Ingredients

1 cup Wild rice(soaked for 4-5 hours)

3 cups fresh kale

handful of fresh arugula

Golden raisins ( soaked for 1 hour)

Olive oil

1/4 tsp Cumin

1/4 tsp Coriander

Salt and Pepper

Goat cheese (optional)

Dressing

1 small beet

1/4 cup water

2 tbsp tahini

1 tbsp lemon juice

1tbs olive oil

1/2 tsp ground cumin

 Pinch of Pink Himalayan sea salt

 

Prepare the wild rice according to the package.  Wash and chop the kale. In a saucepan, sauté olive oil and spices for one minute until the aroma is released. Add the kale and a bit of water. Sauté until tender, adding water as needed.

 Prepare the dressing. In a blender, combine the beet, water, tahini, lemon, oil, cumin, and salt; blend until smooth.  In a bowl, place the sautéed kale, add the wild rice on top, and drizzle the dressing over.  Top with soaked golden raisins, goat cheese, and arugula.
