In the fall and winter, when the winds turn crisp, our bodies begin whispering for warmth, that soft, creamy, kind of nourishment that feels like a warm blanket wrapped around the nervous system. In my enchanted Ayurvedic kitchen, this is the season when the kitchen comes alive, bubbling with grains and roots that steady and nourish the body and quiet the nervous system with grounded goodness.

And what better grain to summon that velvety richness than polenta, soothing and naturally sweet. When it melts into a creamy bowl and is crowned with roasted root vegetables, you create a meal that feels like an anchor. The roots — carrots and beets carry the grounding energy of the earth itself, drawing scattered Vata back home into the body.

Why This Bowl Nourishes Vata

Vata, with its airy, cold, and mobile nature, longs for foods that are:

  • warm

  • creamy

  • moist

  • grounding

  • gently sweet

Polenta offers exactly that. Its soft, smooth texture calms the nervous system, its warmth steadies digestion, and its sweetness soothes the dryness and lightness that accumulate in autumn and winter. Paired with root vegetables, this bowl becomes a deeply stabilizing meal — one that warms the belly, lubricates the tissues, and invites the whole body to exhale.

How to Lighten This Dish for Kapha

Kapha types — or anyone experiencing Kapha imbalance — can still enjoy this cozy bowl with a few thoughtful shifts. Kapha is heavy, cool, and slow, so we lighten the meal while keeping its comfort.

To reduce heaviness:

  • Skip the ghee and cheese — rely on warm spices and vegetable broth for flavor.

  • Enjoy it in late winter or early spring, when Kapha is naturally rising and the body can handle a bit more warmth and stimulation.

  • Add digestive spices like black pepper, ginger, or a pinch of turmeric to keep the channels clear and the metabolism awake.

  • Increase the portion of root vegetables and reduce the polenta slightly for more fiber and lightness.

This way, the dish remains nourishing but doesn’t weigh down Kapha’s already steady, earthy nature.

A creamy, nourishing meal for Fall and Winter with Dosha-appropriate modifications.

Ingredients

  • 1 cup of organic polenta
  • 4-5 cups of water or Veggie/Chicken Stock
  • 2 tablespoons of Ghee
  • 1/2 cup grated Parmesan cheese (optional)
  • Pepitas
  • 1 cup chopped roasted carrots
  • 1 cut chopped roasted beets
  • Salt and Pepper to taste

Instructions

  1. Wash, peel, and chop the carrots and beets.
  2. Place them in a roasting pan and toss with ghee or olive oil until coated. Sprinkle salt and pepper to taste.
  3. Bake in the oven at 425 degrees for 30-45 minutes or until tender.
  4. Start the Polenta when veggies are almost done cooking.
  5. Bring the 4-5 cups of water to a boil. Slowly stir in the cup of polenta while stirring. Whisk in the ghee and Parmesan cheese when the polenta starts to become thick, about 10 minutes.
  6. Place polenta in a bowl and top with the roasted veggies and pepitas.

Notes

This recipe is good for Vata Types in the Fall and Winter because of its creaminess. The ghee and cheese help to counteract the dryness of the grain. In a kapha type, omit the ghee and cheese and preferably have in late winter/early spring.
