one cup of soaked red lentils
two tablespoons maple syrup
½ cup water or coconut milk
A pinch of cinnamon, cardamom, and nutmeg

Mix all ingredients together in a blender and blend until you have a pancake-like consistency. Heat coconut oil on a pan and pour the batter onto pan. Using a spoon smooth out the batter to form a circular shape that is thin like a crepe. Cook on each side for 2-3 minutes or until crispy and light brown. Fold in half and sprinkle shredded coconut flakes or coconut sugar on top. You can also put a scoop of rose petal jam.
